Baked Chicken with Mushroom Gravy

This dish has been widely acclaimed and has received several positive reviews. In fact you may count it as your daily backup dish. When you have no dish in mind, go for this baked chicken recipe.  Mostly, people end up adding different spices to the recipe and it turns out pretty delicious for them. A few alterations include Parmesan and a little black pepper with some garlic salt. This will give your dish a very spicy touch. You may also try making your own sauce which could include some cheese and cream and a little red bell pepper with some sliced fried onions.

Ingredients
  • 1/4 cup all-purpose flour
  • Hot cooked rice
  • 1  pound chicken
  • 1/4 cup melted butter
  • 4 ounces fresh mushrooms, sliced
  • 1 can condensed cream of mushroom soup
  • 1 can evaporated milk
  • 2 cups of chopped onions
  • 1 cup of shredded cheese
  • 1/8 teaspoon pepper
  • 1/2 teaspoon salt
  • 1 dash of paprika

Procedure

Use a baking dish with medium sized dimensions and pour melted butter in it. Place flour in a plastic bag and add a few pieces of chicken at a time and shake the bag to make the coating. Leave the chicken pieces for a while and then keep them skin side down in the baking dish. Preheat the oven to 425 degrees and bake the chicken for 30 minutes. After that, turn all the chicken pieces and bake for another 20 minutes.

While the chicken is in the oven, you can sauté some mushrooms and onions till they get tender. Mix the remaining contents in a bowl. Pull out the chicken and pour the soup mixture and the sautéed onion and mushroom. Sprinkle some paprika on top and reduce the oven heat to 325 degrees. This time cover the dish and bake for another 20 minutes

Potato-Crusted Herb Baked Chicken 

The procedure is simple and the cooking time is just 18 minutes while you need around 12 minutes to prepare for the recipes. This means in just about half an hour, you can prepare a delicious meal of potato-crusted herb baked chicken that serves around 4 to 6 persons.

Ingredients

•    3 tbs of vegetable oil
•    ½ cup flour
•    ¾ teaspoon parsley
•    Boneless chicken
•    2 tbs of water
•    ¾ cup mashed potato
•    ½ teaspoon black pepper
•    1 egg
•    3 teaspoon salt

Procedure

Pound the chicken breast pieces separately such that they reach the thickness of ½ inch. Take a large mixing bowl. Then add flour and seasonings to it. In another bowl combine a whipped egg, water, potato flakes, parsley and the remaining flour.

To coat the chicken, first dip the pieces in flour and then into the egg mixture. After all pieces are properly coated, leave aside for a few minutes. Meanwhile preheat the oven and prepare the pan by brushing it with vegetable oil. Bake the chicken for 10 minutes, pull out the dish, turn over the pieces and bake for another 6 to 8 minutes. The crisp potato-crusted herb baked chicken is ready to be served.

Chili and Cheese Stuffed Chicken


This recipe serves 6 people and has high nutritional value. Chili and cheese stuffed make an amazing combination of rice with cheese and roasted green chilies. The fact that chicken is stuffed with rice and other important ingredients makes it a staple diet and negates the need for a side dish. In any case, the recipe goes well with mashed potato or baked potato.

Ingredients
  • Chicken breast pieces (6)
  • 1/2 cup roasted green chili, chopped
  • 1/4 cup green onions finely chopped
  • 1 cup Cheddar cheese
  • black pepper
  • Salt to taste
  • Corn flakes cereal
  • 2 cups of boiled rice
  • 1 tsp. ground cumin
  • 1egg

Procedure

Take boiled rice and mix with cheese, onion, chili and cumin. Cut a pocket like slits in the chicken breast pieces so that it can be stuffed with the rice filling. The pieces are coated in egg and then in potato flakes. All the coated and stuffed chicken pieced is laid over a slightly greased baking dish. Add more seasoning on top and bake chicken in pre-heated oven for around 40 minutes.
