 Savory Stuffed Chicken with Plum Glaze

A popular saying goes that the way to win a man’s heart bypasses his stomach. What can be a better way to please your husband than a sizzling bowl of Savory Stuffed Chicken with Plum Glaze? The rich distinctive taste stuffed chicken brings a spicy touch to this dish that will surely please any man inhabiting this planet. A little bit of sherry and bell pepper to it will give a unique distinctive flavor that your mate will keep licking his fingers for the rest of the day.

  • 2 boneless chicken (breast pieces)
  • 1 tablespoon olive oil
  • 2 tbl minced celery
  • 1/2 cup chicken stock
  • Salt and pepper to taste
  • Crumbled cooked bacon
  • 2 tablespoons minced onion
  • 2 pieces crumbled cornbread
  • 2 tablespoons butter
  • 1/3 cup plum jam

Add olive oil to a pan on high heat. Take chicken breast pieces and make a cut at the sides of each piece. Sear the chicken pieces until they get charred brown on the outside but are not cooked through. Use a mixing bowl to combine celery, butter, onion, chicken stock and cornbread and place the stuffing inside the chicken pockets. Preheat the oven to 175 degrees centigrade and bake the chicken for 25 minutes.
In a separate cooking pot, 1/3 cup of chicken stock is boiled. Whisk slightly after adding plum jam and allow it to cook over medium heat while the stock evaporates. When the plum glaze is ready, pour it over chicken pieces and allow it to cook for another 10 minutes.
